ESTA upskills local talent and keeps motivation high despite challenges

Over 40 workers from 16 bungalows, hotels, restaurants, and tours in Santo were trained in cookery, food and beverage services, and housekeeping. They worked together at a live demonstration event at Hotel Santo, using locally sourced ingredients.
Training and collaboration
In response to the severe impacts of the absence of flights on local businesses, staff and communities, and to prepare for the anticipated return of domestic and international visitors, Espiritu Santo Tourism Association (ESTA) orchestrated an intensive week-long training program focusing on upskilling local hotel workers in key areas. This upskilling initiative was enabled by the collaboration with the Australia Pacific Training Coalition (APTC), the Vanuatu Institute of Technology (VIT) and the Australian and New Zealand government-funded Market Development Facility (MDF). The trainings focused on on bungalow-style specifics as well as downtown property needs.
It brought together over 40 collaborators from 13 different restaurants, bungalows, hotels, resorts, and tours to be trained in cookery, food and beverage services, and housekeeping. The training culminated in a special dinner event at Hotel Santo, featuring a tasting menu prepared by talented chefs from across Santo using locally sourced ingredients. The event highlighted the skills and resourcefulness of the island’s hospitality staff.
APTC Trainer, Chef Amanda Young, shared her enthusiasm about the training: “It has been an inspiring week working with the staff here on Santo. Their eagerness to learn and enhance their skills is truly commendable. This training not only equipped them with advanced culinary techniques but also reignited their passion for hospitality, which will be essential as they prepare to welcome tourists back to this beautiful island.”
Trainee Jimmy Basil, who participated in the training, expressed his excitement: “This experience has been incredible. I’ve learned new cooking methods and presentation skills that I’m eager to showcase at our dinner event and at work. More importantly, it has given me hope and confidence that we can deliver an excellent experience for future guests to Santo.”
Importance of the Training
ESTA recognises the crucial role that tourism plays in the local economy in Santo, affecting various sectors and communities on the island. By investing in the development of hotel staff, ESTA aims to ensure that the industry remains resilient and ready for the return of tourists.
Board member of ESTA, Lisa Dinh, emphasised the significance of the training: “Our collaboration with APTC, VIT and support from MDF has been vital in keeping the spirit of our tourism industry alive. This training program not only enhances the skill set of our hospitality workers but also reinforces their hope and readiness to provide outstanding service.” She added, “As we look forward to visitors returning to Santo, we want to ensure that our workforce is fully prepared to meet and exceed expectations.”

The special dinner event at Hotel Santo was more than just a showcase of local culinary talent; it represents a beacon of hope for the island’s tourism sector. There is optimism that Santo can once again become a prime destination for travelers.
